What is "Red-Ginger," known as "Beni-Shoga," in Japanese?
The red ginger adds a ginger flavor to Tonkotsu Ramen. Tonkotsu Ramen is developed in Kyushu area on the western side of Japan. Although there are many kinds of Tonkotsu Ramen in Japan, the "Hakata Tonkotsu Ramen" is one of the most well-known. At Hero's Ramen x Sushi, we use the Hakata style. In this style, it is common for customers to add red ginger to their ramen bowl. This is available in many ramen restaurants that serve the Hakata tonkotsu style in Japan, so we have made it available to our customers as well. Customers can find a red ginger bin at the end of each table.
