Our Tonkotsu soup is mainly made of pork and chicken. We cook the soup for 4 hours with the special pressure cooker.
Also, we use the special "Shio Dare" meaning the ramen soup base for our tonkotsu ramen. It is specially designed for our tonkotsu ramen.
The combination of the tonkostu soup and the Shio dare creates the best tasty ramen soup. For any ramen, this balance is the most important.
We keep an eye on the soup temperature. If the soup is not hot, the taste and flavor change. The ramen soup's temperature is very important.
